A small daily menu — six starters, six mains, three desserts — built around what arrived from the farms that morning. Open to non-guests by reservation.
Two treatment rooms, a hammam, a small pool. We don’t do five-day ‘wellness journeys’; we do thirty-minute appointments that fit between coffee and a walk.
Guided walks on the surrounding ridges, a winemaker introduction at the local cooperative, a chef’s-table evening once a month. Concierge can arrange.
Every room has a view of the walled garden or the ridge beyond. The kitchen sources from it. The spa uses oils pressed from it.
Carbon-neutral since 2020, fully renewable electricity, food-waste-to-soil composting, no single-use plastics. We’ll publish the numbers; we won’t put them in the brochure.
The Castelos have owned the hotel since 2009. Helena runs front-of-house; her son Reza is head chef. The third generation is currently aged seven.
